A few precise courses, a bottle you care about, and dessert that is not a performance. If the date matters, say so when you book so the evening is not squeezed.
Allergies and old favourites are both useful. The second tells the chef what ‘special’ means to you.
The setting
Terrace or dining room. Music low. The butler handles the pacing so you are not watching the kitchen door.
